  • 3 Tbsp. olive oil, divided
  • 4 (6- to 8-oz.) boneless skinless chicken breast halves
  • 1 orange bell pepper, chopped
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups frozen fire-roasted corn
  • 1 (15-oz.) can black beans
  • 1 (14 1/2-oz.) can fire roasted diced tomatoes
  • 1 lime, juiced
  • 1 cup shredded pepper jack cheese
  • 1/3 cup chopped fresh cilantro
